Cooling Methods

A reader has asked: Why do some cakes cool in the pan and some cool on a rack?

A: Angel food and some sponge cakes that are baked in ungreased pans cool upside down on a bottle neck or a rack and are scraped from the pan with a long knife after cooling.

Most other cakes are unmolded to a rack to cool.
